Cultable #1 – Coudenberg Palace

DINNER BENEATH PLACE ROYALE
For its very first edition, CULTABLE takes you to a Brussels that can no longer be seen.
Beneath Place Royale, almost 30 metres underground, lie the remains of the former Coudenberg Palace, one of Europe’s most important palaces for several centuries.
Once the castle of the Dukes of Brabant, then the residence of the Dukes of Burgundy and later Emperor Charles V, Coudenberg Palace was one of the centres of European power for almost 700 years.
Today, its cellars, underground passages, the foundations of its former chapel and the old Rue Isabelle form an extraordinary archaeological site, buried beneath the heart of Brussels.
Here, surrounded by almost nine centuries of history, CULTABLE will set its first tables.
THE EXPERIENCE
The evening will begin with a welcome reception featuring a selection of premium products.
You will then embark on an exclusive guided tour of Coudenberg Palace and its underground spaces.
Remains of the palace. The old Rue Isabelle. The foundations of Emperor Charles V’s chapel. Places steeped in history, discovered in privileged conditions.
Then, a change of scenery.
You will take your seat at tables set in the heart of the site for the very first CULTABLE gastronomic experience.
AN EXCEPTIONAL CHEESE & WINE
For this first evening, CULTABLE reimagines the traditional dinner with a Cheese & Wine conceived as a true gastronomic experience.
The cheeses will be selected and matured by Étienne Boissy, Meilleur Ouvrier de France Fromager since 2004 (From Comptoir). For almost fifteen years, he taught Arts de la Table at the Institut Paul Bocuse, developing a particular expertise in the art of selecting, maturing, presenting and showcasing cheese.
For CULTABLE, he will create a selection specially designed for the evening and carefully paired with the wines being served.
GREAT WINES TO COMPLETE THE EXPERIENCE
The pairings will notably feature wines from Stéphane Ogier, a renowned figure from the Rhône Valley.
Known for the remarkable precision of his winemaking, he produces around ten different cuvées in Côte-Rôtie. His wines are regularly acclaimed by international critics, with some receiving the maximum score of 100/100 from Robert Parker.
The idea: not simply to serve wine with cheese, but to tell the story of why the two belong together.
Exceptional cheeses. Great wines. An extraordinary setting.
And a few surprises we would rather keep secret for now.
